Red Willow is a specialty cheese developed by master cheesemaker Jon Meitzig. Each wheel of Red Willow is aged for 20-25 days and washed in a beer and salt mix to give the rind its signature pink hue. The flavor profile is savory and meaty, while not being too strong.
